Too funny having the current challenge be winter.  For all you out there in warmer climates that are fascinated by the beauty of snow...you can have it...lol.  We had a major storm move in yesterday with below freezing temps,  tons of snow and cold blustery winds.  This morning most local schools are closed and freeway traffic is moving at about 25 MPH or below.  All 3 young people had to get up 2 hours earlier than usual for work, scrape windshields and cars.  Our son-in-laws car doors froze open and would not shut so he could leave for work.  Bob was out in frigid temps spraying locks and scaping windows on 3 cars so we could get all 3 on the road to their various work locations.  We will be waiting to hear from all 3 when they arrive

Impossible Pumpkin Pie

3/4 cup sugar

1/2 cup bisquick baking mix

2 tablespoons margarine or butter

1 can evaporated milk

2 eggs

1 can (16oz) pumpkin

2 1/2 teaspoons cinnamon

2 teaspoons vanilla

Lightly grease pie plate 10x1 1/2 or 9x1 1/4

Beat all ingredients until smooth 1 minute in blender on high speed or 2 minutes with hand beater  Pour  into pie plate.

Bake until golden bown and knife inserted in center comes out clean.  50-55 minutes.

Refrigerate any remaining pie

Wonderful recipe given to me by a friend.  Not especially fond of pie crust so a winner with me.
